Are There Really Ethical Hackers? I've Yet To Meet One

I've been ripped off once (although I considered they were scammers), trying to recover a YouTube channel (lost password).

It's funny how they say it's "100% guaranteed" even though there is no way to do anything if/when they take the money and run.

I did hear about something called "Hashcat" for password recovery - does that work?
