Tools for teaching/demoing hacking

I am involved with a school that is teaching cybersecurity, and we received some funding to purchase tools/equipment/software. We want to expand out and setup some teaching/demoing tools for both in our classroom and out. This would include both hands-on tools that people can use, and hands-off tools that are helpful and pretty to look at.

Portable toolkit - We are hoping to setup a mobile toolkit that we can take to high schools, local conferences, community events, etc... This would ideally be a mixture of hands-on and hands-off tools that can showcase technology, how easy hacking can be, and promote our school. This environment may or may not be online depending on the location.

Permanent tools - We are also hoping to setup 1 or more classrooms with different hacking related technology. This should mostly be hands-off tools that don't require a large amount of interaction. Possibly monitors with some sort of a "hacker dashboard" or SPLUNK logs?

Does anyone have any suggestions on what we can do? Any suggested tools, equipment, software, services... These will be supported primarily by students, so simplicity is encouraged
